Hoppin Hot Sauce Nacho Cheese Recipe
The nachos at the 80s mini-golf snack bar were made up of tortilla chips, cheese sauce and pickled jalapenos. That’s it! Looking back, they were the best thing up on the menu.
Ingredients
- 8 ounces extra-sharp cheddar cheese, grated on large holes of a box grater
- 1 tablespoon cornstarch
- One 12-ounce can evaporated milk
- 2 teaspoons Hoppin Hot Sauce
Directions
- Add cheese and cornstarch to a large bowl and toss to combine. Transfer to a medium saucepan.
- Add 1 cup of evaporated milk and hot sauce. Cook over low heat, stirring constantly with whisk until melted, bubbly, and thickened, about 5 minutes. Mixture will look thin and grainy at first but will thicken and come together after heating. Thin to desired consistency with additional evaporated milk. Serve immediately with tortilla chips and pickled jalapenos (if desired).
Notes
To reheat the sauce, microwave on high, stopping to stir every 30 seconds, until melted.
