Spicy Roasted Pistachio Nuts Recipe
These aren’t the run-of-the-mill kind. We’ve cranked the flavor dial to eleven with Extra Hot Hoppin Hot Sauce, cumin seeds, the umami bomb aji no moto, and trusty-ol’ salt. You’ll go ..NUTS?
Ingredients
- 1 cup raw pistachios
- 1 Tablespoon Extra Hot Hoppin Hot Sauce
- 1 Tablespoon whole cumin seed
- 1 teaspoon ajinomoto
- salt, to taste
- olive oil, for drizzling
Directions
- Preheat the oven to 350°F.
- Combine all ingredients in a bowl and stir well.
- Place onto a sheet pan with parchment paper underneath.
- Load into the oven, roast for three or four minutes, stir, and return to the oven for an additional 3-4 minutes.
- Total roasting time should not exceed 8 minutes, and by this time the nuts should be fragrant and turn light brown.
Notes
Look for aji no moto at the asian market. In Japanese, it means “the essence of flavor.” It’s MSG, discovered in 1908 by Kikunae Ikeda (left), who coined the term ‘umami’. Substitute salt.
